What you can do with a juicer. Part 3: Gazpacho from the Slow Juicer

Jaja. Autumn beginning and so on. I know. You are all already banning your soups, running across farmers markets and visiting pumpkin festivals. I have not processed any pumpkin yet and stick to late summer as long as possible. The weather is often quite pleasant and we still have plenty of regional peppers, tomatoes and cucumbers. Perfect for gazpacho! Pumpkin soup and all the warming stews are still here, no question. But such a nice cool glass of juice I just prefer. Incidentally, I still refuse to turn on the heating before October ...
Gazpacho is actually known as a creamy, bright red and cold soup from Spain, which in addition to fresh vegetables also contains olive oil and white bread and often tastes spicy. In my blog you will find an unusual version for watermelon gazpacho. But the color is still a hit!
But I'm still very busy with my cool Slow Juicer * and make me regularly fresh juices from fruits and vegetables. For the late summer is just the perfect time! And in addition to the classic green juices and colorful sweet combinations, then came to me the idea for Gazpacho from the juicer! Granted, the color is not as strong and ingenious as a soup. I am very glad that, thanks to the tomatoes, it has turned quite red and not mat brown. But cucumber, peppers, shallots and garlic look mossy ...
What to do with a juicer
Without the fiber from the vegetable fibers and the Samigkeit it is of course not a classic soup, but really a juice and is very reminiscent of the tomato juice from the plane. Especially cucumber and tomato are very hydrated, so that the result is nice liquid and so you have a good opportunity to just drink the vitamins and minerals. Still full and refreshed, especially good!
For the tomatoes you have to take care while juicing a bit and possibly clean the juicer briefly in between. Through the skin and the cores much remains in the sieve. Therefore, it is advisable to juicing the tomatoes until the end and then clean the juicer directly.
You can also juices onions and garlic super juices and thus get all the nutrients, but of course with the intensity and Be careful of dosage and start with just a clove of garlic and a small shallot and work slowly up.
Depending on your taste, you can also taste the juice with salt and pepper and round with a little olive oil. I also like to sprinkle some chopped parsley on the juice later or just to sprinkle a handful of parsley with it!

Slow Juicer Gazpacho Juice

for Two Large Jars

Ingredients

1 Cucumber

1 green pepper
1 shallot
1 garlic clove
750 g roma or vine tomatoes
1 Tl extra virgin olive oil (optional)
sea salt flakes and freshly ground black pepper to taste

Preparation

Wash the cucumber thoroughly, but do not peel. Cut off the ends and cut the cucumber into pieces. Thoroughly wash, quarter and core the peppers, peel shallot and clove of garlic.Stir well, add some olive oil to taste, season with a little salt and pepper and serve directly.
